- 4 boneless skinless chicken breasts
- Salt and pepper for seasoning
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 cup chicken broth
- ¾ cup heavy cream
- Juice and zest of 1 lemon
- ½ cup grated Parmesan cheese
- 4 cups fresh spinach leaves
Instructions
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- In a large sauté pan, heat olive oil over medium-high heat. Cook the chicken for 3-4 minutes per side until golden brown. Remove from the pan.
- In the same pan, sauté garlic for 1 minute until fragrant. Add chicken broth, lemon juice, and zest; bring to a boil. Reduce heat and stir in the cream. Simmer for 5 minutes until thickened, then add Parmesan cheese.
- Stir in spinach until wilted, return chicken to the pan, cover, and cook for another 2 minutes.
- Serve garnished with lemon slices and extra Parmesan cheese.
