- 1 tablespoon fresh thyme
- 1 tablespoon olive oil (for drizzling)
- 1 tablespoon honey
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- In a medium bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- In a large bowl, mix flour and salt. Add the yeast mixture and olive oil; stir until dough forms.
- Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
- Place in an oiled bowl, cover, and let rise in a warm place for 1 to 1.5 hours or until doubled.
- Preheat your oven to 475°F (245°C) with a pizza stone inside.
- Mix ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl.
- Punch down the risen dough, roll it out into a thin circle (about 12 inches).
- Spread the cheese mixture on the dough, leaving space for the crust; sprinkle with thyme.
- Bake on the preheated stone for 10–12 minutes until golden brown.
- Drizzle with olive oil and honey before serving.
