  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil; stir until dough forms.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover, and let rise in a warm place for 1 to 1.5 hours or until doubled.
  5. Preheat your oven to 475°F (245°C) with a pizza stone inside.
  6. Mix ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl.
  7. Punch down the risen dough, roll it out into a thin circle (about 12 inches).
  8. Spread the cheese mixture on the dough, leaving space for the crust; sprinkle with thyme.
  9. Bake on the preheated stone for 10–12 minutes until golden brown.
  10. Drizzle with olive oil and honey before serving.
