Ingredients
- 4 large eggs (separated)
- 1 cup granulated sugar (divided into 1/3 cup for egg whites, 2/3 cup for the batter)
- 2 tablespoons cornstarch (or sifted cake flour)
- 1 tsp vanilla extract (or zest of one lemon)
- A pinch of salt
- 3/4 cup full-fat yogurt
Instructions
- Preheat the oven to 325°F (160°C) and prepare an 8-inch springform pan by lining the bottom with parchment paper.
- In a clean bowl, whip the egg whites until frothy, then gradually add 1/3 cup sugar until stiff peaks form.
- In another bowl, combine egg yolks, yogurt, vanilla extract or lemon zest, cornstarch, and salt; mix until smooth.
- Gently fold in the whipped egg whites into the yogurt batter in three parts.
- Pour the batter into the prepared pan and place it in a larger baking tray filled with hot water. Bake for 50–60 minutes until golden brown.
