  • 1/2 teaspoon smoked paprika

Instructions

  1. Begin by dicing the eggplant into 1-inch cubes. Sprinkle with kosher salt and set aside for about 10 minutes to draw out moisture. Rinse and pat dry.
  2. In a mixing bowl, combine rinsed eggplant cubes with avocado oil, rosemary, thyme, powdered garlic, smoked paprika, and additional salt if desired. Toss until evenly coated.
  3. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  4. Place the seasoned eggplant in the air fryer basket in a single layer. Cook for approximately 15 minutes, shaking halfway through for even cooking.
