- 1 large eggplant (peeled as desired and diced into 1-inch cubes)
- 2 tablespoons avocado oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/4 teaspoon kosher salt (extra for salting eggplant)
- 1/2 teaspoon powdered garlic
- 1/2 teaspoon smoked paprika
Instructions
- Begin by dicing the eggplant into 1-inch cubes. Sprinkle with kosher salt and set aside for about 10 minutes to draw out moisture. Rinse and pat dry.
- In a mixing bowl, combine rinsed eggplant cubes with avocado oil, rosemary, thyme, powdered garlic, smoked paprika, and additional salt if desired. Toss until evenly coated.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Place the seasoned eggplant in the air fryer basket in a single layer. Cook for approximately 15 minutes, shaking halfway through for even cooking.
- Once cooked to your liking, remove from the air fryer and allow to cool slightly before serving.
