- 4 lb boneless beef chuck roast
- 12 oz whole pepperoncini peppers (with juice)
- 2 cups beef stock
- 1 large onion
- 5 cloves garlic
- Olive oil
- Italian seasonings
Instructions
- Prepare the slow cooker by adding beef stock, pepperoncini, onion, garlic, onion powder, bay leaf, and Italian seasonings; stir to combine.
- Cut beef into large chunks; season with salt and pepper.
- In a skillet, heat olive oil over high heat and sear beef on all sides until browned.
- Transfer seared beef to the slow cooker and reduce heat to low; cook for 6 hours.
- Once cooked, shred the beef and serve with reduced cooking liquid as a dipping sauce.
