- 1¾ cups all-purpose flour
- 1¼ cups canned pumpkin puree
- 1 cup granulated sugar
- ½ cup canola oil
- 2 large eggs
- 3 tablespoons brown sugar (for topping)
- ½ cup chopped pecans (for topping)
- 1¼ teaspoons maple extract
- 1½ teaspoons pumpkin pie spice
- 2 teaspoons cinnamon
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the topping by mixing chopped pecans, brown sugar, flour, cinnamon, and salt in a bowl. Add melted butter and mix until crumbly.
- In a separate bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
- In another bowl, beat eggs and sugar until fluffy; then add oil, pumpkin puree, milk, and maple extract until smooth.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Pour half the batter into a greased loaf pan; sprinkle with half of the topping mixture. Repeat with the remaining batter and topping.
- Bake for about 50 minutes or until a toothpick comes out clean. Cool before slicing.
