- 4 cups cooked chopped chicken breast
- 2 cups cauliflower rice
- 4 ounces cream cheese
- 1 cup salsa
- 8 ounces shredded cheese (Mexican or cheddar)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
Instructions
- Preheat your oven to 400°F and spray a baking dish with cooking spray.
- In a microwave-safe bowl, combine cream cheese and salsa; microwave for 1-2 minutes until softened. Stir in chili powder and cumin.
- Add chopped chicken and cauliflower rice to the cream cheese mixture along with half of the shredded cheese; mix well.
- Spoon the mixture into the prepared baking dish and top with remaining shredded cheese.
- Bake for about 30 minutes until golden brown and bubbly. Let cool slightly before serving.
