- 2 cups all-purpose flour
- 1 cup packed brown sugar
- 1 cup cold butter
- 5 large eggs
- 1 cup dark corn syrup
- ⅔ cup granulated sugar
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- 2 cups chopped pecans
Instructions
- Preheat oven to 350°F (175°C) and lightly spray two 12-cup muffin tins with non-stick cooking spray.
- In a mixing bowl, combine flour and brown sugar. Cut in cold butter until crumbly. Press about one tablespoon of the mixture into each muffin tin cavity.
- In another bowl, whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt. Stir in chopped pecans.
- Pour the pecan filling into each prepared crust until just below the rim.
- Bake for about 40 minutes or until the filling is set. Allow cooling slightly before serving.
