  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and lightly spray two 12-cup muffin tins with non-stick cooking spray.
  2. In a mixing bowl, combine flour and brown sugar. Cut in cold butter until crumbly. Press about one tablespoon of the mixture into each muffin tin cavity.
  3. In another bowl, whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt. Stir in chopped pecans.
  4. Pour the pecan filling into each prepared crust until just below the rim.
  5. Bake for about 40 minutes or until the filling is set. Allow cooling slightly before serving.
