Ingredients
- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 1 can sliced pineapples (drained)
- Maraschino cherries
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a saucepan over low heat, melt the unsalted butter and mix in brown sugar until smooth. Pour into each muffin cup.
- Place a slice of pineapple and a maraschino cherry in each cup over the butter mixture.
- In a mixing bowl, cream together granulated sugar and egg until fluffy. Gradually add milk and vanilla extract.
- In another bowl, whisk flour, baking powder, and salt. Combine with wet ingredients until just mixed.
- Spoon batter over pineapple layers in muffin cups until two-thirds full.
- Bake for about 20 minutes or until a toothpick comes out clean; let cool slightly before serving.
