Ingredients

  • 16 ounces cremini mushrooms
  • 1 cup cooked pinto or black beans
  • ½ cup raw walnut halves
  • 1 ¼ cups cooked pearled barley
  • 1 small onion
  • 3 cloves garlic
  • Panko breadcrumbs
  • Nutritional yeast
  • Vegan Worcestershire sauce

Instructions

  1. Sauté chopped onions and sliced mushrooms in a large sauté pan until soft and liquid evaporates (about 15 minutes). Add minced garlic, thyme, and smoked paprika; cook for another 2-3 minutes.
  2. Preheat oven to 400°F and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled. Add sautéed mixture, barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper; process until combined but slightly chunky.
  4. Shape into about 8 patties using scant ½ cup per patty. Optionally brush with vegan Worcestershire and sprinkle with pepper.
  5. Bake for 30-35 minutes, flipping halfway through until golden brown.
