  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt and pepper
  • 1 (4-ounce) can mild green chiles
  • 1/4 cup heavy cream + more for thinning if needed
  • 2 ounces cream cheese (softened)
  • 1 1/2 cup shredded pepper jack cheese
  • 1/2 cup white American cheese

Instructions

  1. Prepare the spices by mixing chili powder, paprika, garlic powder, onion powder, cumin, oregano, salt, and pepper in a small bowl.
  2. Heat olive oil in a large skillet over medium heat. Add cubed chicken and sprinkle with spice mix. Cook for 3-4 minutes on each side until browned and cooked through. Remove from skillet.
  3. In the same skillet on low heat, combine green chiles, cream cheese, and heavy cream. Gradually stir in shredded cheeses until melted and creamy.
  4. Add the cooked chicken back into the skillet and toss to coat with queso sauce. Serve immediately.
