- 12 oz penne pasta
- 2 cups cooked chicken (shredded or diced)
- 3 cups chicken broth
- 1 cup heavy cream
- 1–2 chipotle peppers in adobo sauce (finely chopped)
- 1 tbsp adobo sauce
- 1 small onion (optional)
- 3 cloves garlic (minced)
- 2 cups shredded cheddar cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Sauté chopped onion and minced garlic in olive oil over medium heat until soft.
- Add cooked chicken, chipotle peppers, and adobo sauce; stir well to combine.
- Pour in chicken broth and heavy cream, mixing thoroughly.
- Stir in uncooked penne pasta and bring to a simmer; cover and cook for 10–12 minutes until pasta is tender.
- Reduce heat to low; gradually add shredded cheese while stirring until melted.
- Season with salt, pepper, or extra adobo sauce as desired.
- Let sit for a few minutes before serving to thicken.
