Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a mixing bowl, whisk together sugar, eggs, vegetable oil, milk, orange juice, and grated orange zest until smooth.
- In another bowl, mix flour, baking powder, baking soda, salt, and ground cardamom.
- Gently fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Fill muffin tins two-thirds full with the batter and sprinkle with sparkling sugar.
- Bake for 20–22 minutes or until a toothpick comes out clean.
