- 4 large zucchini or summer squash

- 1/3 cup freshly grated parmesan cheese
- 2 tbsp olive oil
- Kosher salt and freshly ground black pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the zucchini into ¼-inch rounds. In a mixing bowl, toss the slices with olive oil, garlic powder, salt, and pepper until evenly coated.
- Arrange the zucchini slices on the baking sheet in a single layer and sprinkle with parmesan cheese.
- Roast for 9-10 minutes until tender, then switch to broil for an additional 2-3 minutes until the cheese is golden brown.
- Allow to cool slightly before serving.
