  • 4 small–medium chicken breasts (or 2 large, halved)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • ½ cup Parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Preheat a frying pan over medium heat and add olive oil.
  2. Season chicken breasts with salt and pepper. Combine panko and Parmesan cheese in a shallow bowl.
  3. Coat each chicken breast in the breadcrumb mixture.
  4. Cook chicken for 5-7 minutes per side until golden brown and cooked through. Set aside.
