- 1/3 cup powdered sugar (38 grams)
- 1/4 tsp vanilla extract
- pinch of cinnamon (to taste – start small!)
- 1–2 tbsp milk (15 to 30 mL)
Instructions
- Prepare the peach filling by cooking diced peaches with sugars, lemon juice, cinnamon, and nutmeg until bubbly. Stir in cornstarch mixed with water and cool in the fridge.
- Cream together softened butter and sugars in a large bowl, then add eggs and vanilla extract. Mix in dry ingredients until dough forms; chill for at least 30 minutes.
- Scoop dough into balls and chill for 3 hours or freeze for 2 hours.
- Make the streusel topping by mixing melted butter with sugar and spices; bake until golden.
- Bake cookie dough balls at 350°F until edges are set but centers are slightly underdone.
- Assemble cookies by filling with peach mixture, topping with streusel, and drizzling with glaze.
