- 1 1/4 cup all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup white sugar
- 1 cup chopped fresh (or canned) peaches (divided)
- 1/2 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
- In a mixing bowl, combine flour, baking powder, salt, and sugar.
- In another bowl, whisk together milk, egg, oil, and vanilla. Fold the wet ingredients into the dry until just combined. Gently mix in 3/4 cup of chopped peaches.
- For the topping, mix remaining flour, sugar, baking powder, cinnamon, and cold butter until crumbly.
- Fill muffin cups halfway with batter. Top with remaining peach chunks and sprinkle with the topping mixture.
- Bake for about 20 minutes until golden brown; check doneness with a toothpick.
