  • 1 1/2 teaspoon baking powder

  • 2/3 cup white sugar
  • 1 cup chopped fresh (or canned) peaches (divided)
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a mixing bowl, combine flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together milk, egg, oil, and vanilla. Fold the wet ingredients into the dry until just combined. Gently mix in 3/4 cup of chopped peaches.
  4. For the topping, mix remaining flour, sugar, baking powder, cinnamon, and cold butter until crumbly.
  5. Fill muffin cups halfway with batter. Top with remaining peach chunks and sprinkle with the topping mixture.
  6. Bake for about 20 minutes until golden brown; check doneness with a toothpick.
