Instructions
- Prepare the peach topping: Melt butter in a saucepan over medium heat. Add peaches, brown sugar, cinnamon, and lemon juice; cook until peaches are tender (5–7 minutes).
- Make the pancake batter: In one bowl, whisk flour, sugar, baking powder, and salt. In another bowl, combine milk, egg, and melted butter. Pour wet ingredients into dry ingredients; stir until just mixed.
- Cook pancakes: Preheat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake; cook until bubbles form (2–3 minutes), then flip to golden brown.
- Assemble: Stack pancakes on plates and top generously with peach mixture.
