  • pounds beef tenderloin (trimmed)
  • 4 slices fresh pineapple (½-inch thick)
  • 5 tablespoons hoisin sauce (divided)
  • 2 teaspoons grated fresh ginger (divided)
  • 1 medium garlic clove (minced)
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. In a mixing bowl, blend together 3 tablespoons hoisin sauce, grated ginger, minced garlic, and Dijon mustard until smooth.
  2. Coat each pineapple slice with the marinade and let them sit for 10 minutes.
  3. Preheat your broiler on high and arrange the marinated pineapple on a broiler pan.
  4. Broil the pineapple for about 5 minutes on each side until caramelized.
  5. Rub salt and pepper over the trimmed beef tenderloin.
  6. Place the seasoned tenderloin under the broiler for about 15-20 minutes until it reaches an internal temperature of at least 135°F for medium-rare.
  7. In another bowl, mix together the remaining ingredients: 2 tablespoons hoisin sauce, pineapple juice, grated ginger, soy sauce, salt, and pepper for the sauce.
  8. Let the tenderloin rest for 10 minutes before slicing against the grain. Serve alongside broiled pineapple slices drizzled with the prepared sauce.
