Instructions
- Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the garlic, thyme, cinnamon, and nutmeg; cook for another minute until fragrant.
- Combine Ingredients: Add the pumpkin puree to the pot along with apple cider and stock. Stir well to combine.
- Simmer: Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes to allow flavors to meld.
- Blend: Use an immersion blender or transfer to a standard blender to puree until smooth.
- Serve: Taste and adjust seasoning if necessary. Ladle into bowls and serve warm.
