Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and prepare a greased 9×13-inch baking dish.
- In a bowl, mix flour, oats, packed brown sugar, baking soda, and salt. Stir in melted butter to form the crumble mixture.
- Press two-thirds of the crumble into the baking dish as the base layer.
- In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth. Pour over the base layer.
- Sprinkle the remaining crumble on top and add chopped walnuts if desired. Bake for 30–35 minutes until golden brown.
- Let cool completely before slicing into squares.
