  • 2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased 9×13-inch baking dish.
  2. In a bowl, mix flour, oats, packed brown sugar, baking soda, and salt. Stir in melted butter to form the crumble mixture.
  3. Press two-thirds of the crumble into the baking dish as the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth. Pour over the base layer.
  5. Sprinkle the remaining crumble on top and add chopped walnuts if desired. Bake for 30–35 minutes until golden brown.
  6. Let cool completely before slicing into squares.
