Instructions
- Chill the dough in the refrigerator for 30 minutes.

- In a mixing bowl, combine dry ingredients: flour, baking soda, spices, and salt.
- In another bowl, cream together butter and sugars until light and fluffy.
- Mix in the pumpkin puree until well combined.
- Gradually add dry ingredients to the wet mixture until just combined; do not overmix.
- Form dough balls using a cookie scoop, roll in sugar, and place on lined baking sheets.
- Preheat oven to 350°F and bake cookies for 15-19 minutes until lightly golden on edges.
- Allow cookies to cool before serving.
