Ingredients

  • 2 medium zucchini
  • 2 medium yellow zucchini
  • 34 plum tomatoes
  • 1 small onion
  • 1/2 medium orange bell pepper
  • 3 cloves garlic
  • Fresh parsley and thyme
  • Parmesan cheese
  • Breadcrumbs
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice all vegetables uniformly. In a mixing bowl, combine zucchini, yellow zucchini, tomatoes, onion, bell pepper, garlic, herbs, salt, and pepper; toss well.
  3. Grease a baking dish and layer half of the vegetable mixture evenly at the bottom. Drizzle half of the olive oil and sprinkle half of the breadcrumbs and Parmesan on top. Repeat with the remaining ingredients.
  4. Cover with foil and bake for about 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  5. Allow to cool slightly before serving.
