Instructions

  1. In a large mixing bowl, combine flour, salt, yeast, rosemary, garlic, and optional black pepper. Add warm water and olive oil; stir until a sticky dough forms.
  2. Cover the bowl with plastic wrap and let it rise at room temperature for 12-18 hours until doubled in size.
  3. Lightly flour a surface, turn out the dough, and gently shape it into a round loaf.
  4. Place on floured parchment paper, cover it again, and let rest for another 30-45 minutes while preheating your oven to 450°F (230°C) with a Dutch oven inside.
  5. Carefully transfer the dough on parchment into the hot Dutch oven. Cover and bake for 30 minutes.
  6. Remove the lid and continue baking for an additional 10-15 minutes until golden brown.
  7. Cool on a wire rack for at least 15 minutes before slicing.
