- 2 cups all-purpose flour

- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1 cup whole milk
- 1/4 cup olive oil
- 2 large eggs
- 1 cup pitted olives (green, black, or a mix)
- 1 tablespoon fresh thyme leaves (optional)
- 2 tablespoons butter (melted, or non-stick cooking spray for greasing the loaf pan)
Instructions
- Preheat the oven to 375Β°F (190Β°C). Grease a 9Γ5 inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, salt, black pepper, and cayenne pepper (if using).
- In another bowl, whisk together the whole milk, olive oil, and eggs until well combined.
- Gently add the wet ingredients to the dry mixture and stir until just combined; do not overmix.
- Fold in the shredded cheese, pitted olives, and fresh thyme (if using).
- Pour the batter into the greased loaf pan and spread evenly.
- Bake for about 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely before slicing.
