Ingredients
- 14 oz chicken or turkey sausage, cut into 1/2-inch slices
- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 2 cups broccoli, cut into 1/2-inch florets
- 1 tablespoon unsalted butter
- 4 medium cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, arrange sliced sausage, cubed sweet potatoes, and broccoli in a single layer.
- In a small saucepan over medium heat, melt the butter and sauté minced garlic until fragrant. Stir in honey, soy sauce, apple cider vinegar, salt, and pepper; simmer for 2-3 minutes.
- Pour the sauce over the ingredients on the baking sheet, tossing to coat evenly.
- Roast for 25-30 minutes, stirring halfway through until sweet potatoes are tender and sausage is cooked through.
- Serve hot, garnished with fresh parsley.
