- 2 boneless, skinless chicken breasts
- 4 slices Turkey Bacon
- 1 ripe avocado
- 2 slices pepper jack cheese
- 2 brioche buns
- ¼ cup mayonnaise
- 1 tbsp adobo sauce (from canned chipotles in adobo)
- ½ tsp lime juice
- 1 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ¼ tsp cayenne pepper
- Salt and pepper to taste
- ¼ cup pickled jalapeños
Instructions
- Pound chicken breasts to an even thickness, season with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
- Grill chicken over medium-high heat for 4–5 minutes on each side until cooked through (165°F internal temperature), adding cheese in the last minute to melt.
- Mix mayonnaise with chipotle adobo sauce and lime juice until smooth.
- Toast brioche buns on the grill or skillet until golden brown.
- Assemble by spreading chipotle mayo on both sides of the buns; layer with sliced avocado, grilled chicken with melted cheese, Turkey Bacon, and pickled jalapeños.
