  • ½ cup butter (for sauce)
  • 1 cup brown sugar
  • ½ cup cream
  • ½ teaspoon kosher salt
  • Whipped cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. Combine chopped dates and baking soda in a bowl, then scald milk in a saucepan and pour over the dates; set aside.
  3. Mix flour, baking powder, and salt in one bowl; whisk eggs in another bowl. In a food processor, combine eggs, dark brown sugar, butter, and vanilla until mixed. Gradually add dry ingredients and the soaked dates until you have a smooth batter.
  4. Pour batter into the prepared dish and bake for about 30 minutes until golden and set.
  5. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and salt, then gradually add cream while stirring until bubbling; simmer until thickened.
  6. Once baked, poke holes in the pudding and pour one-third of the caramel sauce over it; let it absorb for about 15 minutes before serving.
