Ingredients
- 1 cup chopped dates
- 1 cup homogenized milk
- 1 teaspoon baking soda
- 2 tablespoons butter
- 1 cup dark brown sugar
- 2 eggs, room temperature
- 2 teaspoons pure vanilla extract
- 2 cups unbleached all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- Sea salt flakes
- ½ cup butter (for sauce)
- 1 cup brown sugar
- ½ cup cream
- ½ teaspoon kosher salt
- Whipped cream for serving
Instructions
- Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
- Combine chopped dates and baking soda in a bowl, then scald milk in a saucepan and pour over the dates; set aside.
- Mix flour, baking powder, and salt in one bowl; whisk eggs in another bowl. In a food processor, combine eggs, dark brown sugar, butter, and vanilla until mixed. Gradually add dry ingredients and the soaked dates until you have a smooth batter.
- Pour batter into the prepared dish and bake for about 30 minutes until golden and set.
- For the caramel sauce, melt butter in a saucepan, stir in brown sugar and salt, then gradually add cream while stirring until bubbling; simmer until thickened.
- Once baked, poke holes in the pudding and pour one-third of the caramel sauce over it; let it absorb for about 15 minutes before serving.
