- 1/2 cup (100g) packed brown sugar
- 2 tablespoons ground cinnamon
- 1/4 teaspoon salt

- 1 cup (150g) fresh strawberries, hulled and sliced
- 1 tablespoon sugar (optional)
- 4 oz (115g) cream cheese, softened
- 1/2 cup (60g) powdered sugar
- 1/4 teaspoon vanilla extract
- 1–2 tablespoons whole milk
- Pinch of salt
Instructions
- Activate yeast by combining lukewarm milk and yeast in a bowl; let sit until frothy (5-10 minutes).
- In a large mixing bowl, combine flour, sugar, and salt. Make a well in the center; add activated yeast mixture along with softened butter, egg, and vanilla extract. Mix until dough forms.
- Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
- Place dough in a greased bowl; cover and let rise in a warm spot for 1–1.5 hours until doubled.
- While dough rises, prepare the cheesecake filling by beating softened cream cheese until smooth; mix in sugar, vanilla extract, flour, and sour cream or Greek yogurt.
- After rising time is complete, punch down dough and roll into a rectangle (16×12 inches). Spread softened butter over the dough.
- Evenly spread cheesecake filling over the buttered dough and sprinkle with cinnamon-sugar mixture.
- Roll tightly from one long edge to form a log; cut into 12 equal pieces.
- Place rolls in a greased baking dish; cover loosely and let rise for another 30–45 minutes until puffed up.
- Preheat oven to 350°F (175°C). Bake for 25–30 minutes until golden brown.
- Cool slightly before icing with cream cheese icing made from beating together softened cream cheese with powdered sugar and vanilla extract.
