- 1 cup fresh strawberries, diced
- 2 tablespoons granulated sugar (for strawberries)
- 1 1/2 cups crushed shortbread cookies or graham crackers
- 1/4 cup unsalted butter, melted
- 6 large crepes or thin cake layers
- Powdered sugar for dusting
Instructions
- In a mixing bowl, beat cream cheese, granulated sugar, and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture.
- Combine diced strawberries with granulated sugar and let sit for about 10 minutes to macerate.
- Mix crushed cookies or graham crackers with melted butter until resembling wet sand.
- Layer one crepe with cheesecake filling, macerated strawberries, and cookie crumbs; roll tightly.
- Wrap rolls in plastic wrap and refrigerate for at least one hour. Slice into pieces and dust with powdered sugar before serving.
