- 4 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 eggs
- ½ cup Carbalose flour
- 1 tsp xanthan gum
- ¼ cup orange juice
- 3 tbsp sugar-free orange marmalade
- 3 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 garlic cloves (minced)
Instructions
- Cut the chicken into bite-sized pieces and mince the garlic.
- In one shallow bowl, whisk the eggs. In another, combine Carbalose flour and xanthan gum.
- Preheat a skillet over medium-high heat and add oil.
- Dip each chicken piece into the egg mixture, then dredge in the flour mix, shaking off excess.
- Cook the chicken until browned and cooked through; drain on paper towels.
- Whisk together remaining ingredients to make the sauce and pour it into the skillet.
- Add cooked chicken back to the skillet, coat with sauce, heat through, and serve.
