- 5 cups sweet potato (peeled and cubed)
- 1 cup apple (Gala or Golden Delicious recommended)
- 1 tbsp olive oil
- 1 shallot (chopped)
- 3.5 cups low sodium vegetable broth
- 1/8 tsp fresh nutmeg
- 1/4 tsp cinnamon
- pinch kosher salt
- fresh pepper (optional)
- maple syrup (optional)
Instructions
- Heat olive oil in a medium-sized soup pan over medium heat until shimmering.
- Sauté chopped shallots until translucent, about 3-4 minutes.
- Add cubed sweet potatoes and diced apples; sprinkle with salt and sauté for 3 minutes.
- Pour in enough vegetable broth to cover the vegetables; bring to a gentle simmer.
- Simmer until both sweet potatoes and apples are soft, approximately 15-20 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in nutmeg and cinnamon; adjust seasonings as needed before serving.
