- 1½ cups sweet potatoes (mashed)

Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing on low speed; then add vanilla extract and mashed sweet potatoes until well combined.
- In another bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg together.
- Gradually mix the dry ingredients into the wet mixture until just combined. Pour batter into the prepared loaf pan.
- Combine topping ingredients in a small bowl; sprinkle over the batter.
- Bake for 55–65 minutes or until a toothpick inserted comes out clean.
- Cool for 15 minutes before transferring to a rack.
