- 3 medium sweet potatoes, peeled and diced

- 3 tablespoons extra virgin olive oil

- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon freshly squeezed lemon juice
Instructions
- Preheat the oven to 425°F (220°C).
- In a large mixing bowl, combine diced sweet potatoes and green beans.
- Drizzle olive oil over the vegetables, then add garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until well coated.
- Spread the mixture evenly on a baking sheet.
- Roast in the oven for 25-30 minutes, stirring halfway through until the sweet potatoes are soft and golden.
- Remove from the oven and drizzle with lemon juice before serving.
