Ingredients
- 2 bags frozen peaches (20 ounces each)
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1/2 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons corn starch
- 1 teaspoon cream of tartar
- 1/2 stick unsalted butter (room temperature)
- 2 tablespoons water
- 1 teaspoon fresh lemon juice
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1 tablespoon cinnamon (reserve 1/2 for garnishment)
- 1 stick cold unsalted butter
- 1/4 cup boiling hot water
- 1/2 teaspoon salt
- 3 tablespoons granulated sugar (to dust top of cobbler)
Instructions
- Preheat your oven to 375°F.
- In a sprayed 9×13 baking dish, combine frozen peaches with sugars, vanilla extract, almond extract (if using), cinnamon, nutmeg, cornstarch, cream of tartar, room temperature butter, lemon juice, and water. Mix well and bake covered for 20 minutes.
- While baking, prepare the topping by mixing flour, sugars, baking powder, salt, and cinnamon in a bowl. Cut in cold butter until crumbly. Gradually add hot water until just combined.
- After the peach mixture bakes, spoon dollops of topping over it and sprinkle with remaining cinnamon sugar. Bake uncovered for an additional 30-45 minutes until golden brown.
