Ingredients
- 8 large eggs
- Salt and pepper to taste
- 4 (10-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 8 slices cooked turkey bacon
Instructions
- In a large skillet over medium-high heat, coat with cooking spray or butter. Add the eggs and season with salt and pepper. Stir until just set but still slightly wet, about 5 minutes.
- Lay out the tortillas and divide the scrambled eggs evenly among them. Top each with 1/4 cup of shredded cheddar cheese and 2 slices of turkey bacon.
- Fold three sides of each tortilla inward and roll from one end to close securely.
- Wrap each burrito tightly in plastic wrap for storage or serve immediately.
