- ¼ cup packed light brown sugar

- ¼ cup unsalted butter, cold and cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla until combined.
- Pour the wet mixture into the dry ingredients and stir until just moistened; fold in chopped apples gently.
- For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl; cut in cold butter until crumbly.
- Fill muffin cups with batter and sprinkle streusel on top.
- Bake for 18-22 minutes or until a skewer comes out clean.
