Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a stand mixer, beat together softened butter, light brown sugar, and granulated sugar until creamy. Add egg, pumpkin puree, and vanilla extract; mix until combined.
- In a separate bowl, whisk together flour, baking soda, pudding mix, cinnamon, pumpkin pie spice, and salt. Gradually add this dry mixture into the wet ingredients until just combined. Fold in white chocolate chips gently.
- Use a cookie scoop to drop dough onto prepared baking sheets. Sprinkle cinnamon-sugar topping over each cookie ball.
- Bake for about 10 minutes until lightly golden around the edges. Let cool on baking sheets before serving.
