Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze out excess moisture.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Add the egg and vanilla extract; mix until combined.
- In another bowl, whisk together flour, oats, baking soda, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture; stir until just combined.
- Fold in the grated zucchini and chocolate chips.
- Scoop rounded balls of dough onto a lined baking sheet, spacing them out.
- Bake for about 12-15 minutes or until edges are golden brown.
- Cool on the baking sheet before transferring to a wire rack.
